Ingredients
- 1 Pack of 400g penne
- 4 Italian sausages of your choosing, cut in small pieces
- 1 Pack of 142g baby spinach
- ½ a jar of Julienne Sundried Tomatoes
- 3 cups of chicken or vegetable broth
- 2 cloves of garlic, chopped
- 1 onion (yellow or red), chopped
- ¼ cup of Parmesan cheese (or more)
- 2 tbsp of olive oil
- Salt and pepper
Preparation
- In a large saucepan, cook the onion and garlic for 3 to 4 minutes.
- Add the sausage meat and cook about 5 minutes.
- Pour in the broth and add the pasta. Bring to a boil, then reduce the heat to medium and simmer, half covered, until the pasta is al dente and the liquid has been almost completely absorbed, stirring occasionally, about 12 minutes (if the pasta absorb the liquid too quickly, add a little broth).
- When the pasta is almost cooked, add the spinach and the sundried tomatoes and cover until tender. Proceed in batches if necessary, as fresh spinach is bulky.
- Remove from the heat, stir in the parmesan, salt and pepper and serve.
