Ingredients

  • 1 can of chickpeas (540 ml)
  • 1 can of coconut milk (398 ml)
  • 1 block of feta cheese (200 g) cut in 8 pieces
  • 2 cloves of chopped garlic
  • 1 chopped onion
  • 2 tbsp of chopped ginger
  • 1 tbsp butter
  • Salt
  • 4 naan breads
  • Basmati rice

Spices

  • 3 tbsp of tomato paste
  • 1 tbsp of garam masala
  • 2 tsp of cumin
  • 1/2 tsp of cinnamon
  • 1/4 tbsp of chili powder

Preparation

  1. Preheat the oven to 400°F or 200°C.
  2. Put the rice to cook.
  3. In a large pan that goes in the oven, cook the onion, garlic and ginger in butter until tender.
  4. Add the spices, salt, tomato paste and chickpeas and cook 1-2 minutes.
  5. Stir in the coconut milk, bring to boil and reduce for 5-7 minutes.
  6. Add the feta in the mix and send to oven for 15 to 20 minutes. Feta will soften, but not melt.
  7. Serve on rice with naan breads.
