Ingredients
- 1 can of chickpeas (540 ml)
- 1 can of coconut milk (398 ml)
- 1 block of feta cheese (200 g) cut in 8 pieces
- 2 cloves of chopped garlic
- 1 chopped onion
- 2 tbsp of chopped ginger
- 1 tbsp butter
- Salt
- 4 naan breads
- Basmati rice
Spices
- 3 tbsp of tomato paste
- 1 tbsp of garam masala
- 2 tsp of cumin
- 1/2 tsp of cinnamon
- 1/4 tbsp of chili powder
Preparation
- Preheat the oven to 400°F or 200°C.
- Put the rice to cook.
- In a large pan that goes in the oven, cook the onion, garlic and ginger in butter until tender.
- Add the spices, salt, tomato paste and chickpeas and cook 1-2 minutes.
- Stir in the coconut milk, bring to boil and reduce for 5-7 minutes.
- Add the feta in the mix and send to oven for 15 to 20 minutes. Feta will soften, but not melt.
- Serve on rice with naan breads.
