Ingredients:
- 11 slices of uncooked lasagna pasta;
- A 700 ml box of St-Germain spaghetti sauce;
- One pack (142g) of baby spinach;
- One pack (227g) of white mushrooms (or two if you love them!);
- One onion;
- ~300g of mozzarella cheese, grated;
- ~50g of Parmesan cheese, grated;
Steps:
- Heat enough water for all lasagna pasta in a large pot;
- When the water is boiling, add the pasta and cook until al dente.
- Cut the onion in cubes;
- In a large pan, cook the onion and mushrooms;
- When onion and mushrooms are soft, remove them from the skillet;
- In the same skillet, add the spinach, cook until soft and re-add the onion and mushrooms, let them rest;
- Pre-heat the oven to 375 degrees F;
- When all ingredients are cooked and the pasta is drained, add a very small layer of sauce to the bottom of a lasagna pan;
- Add 3 slices of pasta for the first layer;
- Cover the pasta with sauce;
- Add next 3 slices of pasta for the second layer;
- Add the mushrooms, onion and spinach mix; ** You can add feta cheese here for extra goodness
- Add next 3 slices of pasta for third layer;
- Cover with the reminder of sauce;
- Add mozzarella and Parmesan cheese to the top, then send to the oven;
- Cook until cheese is melted and sauce is boiling, you can finish it on broil;
- Remove from oven, add pepper to the top and cut into 8 equal parts, enjoy!!
