Recipe from Olivier Gamache
Ingredients:
- 3/4 cups of rice (brown or white as you prefer)
- 341 ml of peaches and cream corn
- 540 ml of black beans
- 1 bag of Old el paso burrito or tacos mix
- I recommend buying the economix format
- 1 pound of ground beef
For the serving:
- 500 ml Sour cream (14%)
- Salsa
- 1 tomato (chopped)
- Coriander
- Shredded cheese
- Bag of 8 to 10 tortillas (I would go for the big ones, but smaller are also good)
Steps:
- Start by cooking the rice in a small pot;
- 5 min before the rice is ready, start to cook the meat (high temperature) in a large pot (so you can add all the ingredients into it at the end);
- Once the meat is cooked, drain it;
- Wash the beans;
- Pour the rice and the black beans with the meat;
- Follow the instruction on the tacos mix bag: (if you have the economic format, you can put a bit more spices than recommended ;) )
- Add 2/3 cups of water;
- Add the spices and stir;
- Finish by adding the corn.
For the serving:
- In one tortilla, spread one spoon of sour creme and one of salsa;
- Add the burrito mix;
- Add the toppings as you wish:
- chopped tomatoes;
- Shredded cheese;
- sriracha sauce;
- Couple of coriander leafs;
- You can add Guacamole if you have some too!
** For the quantity, go as you like! You can put less black beans or custom the topping if you have ideas
