Andreas’ Aioli

  • 1 egg
  • 1 tbsp lime juice
  • 1 tbsp Dijon mustard
  • 1.5 mL salt
  • 1 mL white pepper

Instructions:

  1. In a mixing bowl, combine the egg, lime juice, Dijon mustard, salt, and white pepper (all but garlic and oil).
  2. While whisking (or blending) continuously, slowly drizzle in the rapeseed oil until the mixture thickens and emulsifies.
  3. Finely grate or crush the garlic and stir it into the aioli.
