Andreas’ Aioli
- 1 egg
- 1 tbsp lime juice
- 1 tbsp Dijon mustard
- 1.5 mL salt
- 1 mL white pepper
Instructions:
- In a mixing bowl, combine the egg, lime juice, Dijon mustard, salt, and white pepper (all but garlic and oil).
- While whisking (or blending) continuously, slowly drizzle in the rapeseed oil until the mixture thickens and emulsifies.
- Finely grate or crush the garlic and stir it into the aioli.
