Start with the canned report dashboard for the Help Center (Zendesk Guide: Knowledge Base)
Once there, you must revise the dates to see the time frame you are interested in, and filter to see just the articles you are interested in. For example, you can set a date range and the number of articles from the top or bottom, and see views per article title.
The hierarchy
You can filter to include certain sections, but you can't do a whole category.
Customize
However, custom queries and dashboards can be created and saved for future use.
To see all articles in a category like Teaching and Course Administration you would need to build a query that contains all those sections. If you save that query to a dashboard, it can be shared and referenced periodically without creating the complex query again.
