It's important to understand the difference between a rotary encoder and a rotary switch. A rotary encoder can be connected to a controller via 3 pins (an additional 2 pins if it has a button function) and have incremental steps, a and b for example. A rotary switch has multiple pins and is typically connected with a resistor ladder PCB or by other means, these have defined positions, 1-12 for example.

Here are some rotary switch recommendations. In order to use your typical 6.35mm rotary knob with a Grayhill 56 series you can use the TE Connectivity KR104 Adapter.

Note: the Lorlin rotary switches in the above have a fixed starting stop, if you require unrestricted rotation you will need to open them and cut the stop. There may be a part number that does not have this but you will need to find that model.
Note: the Leo Bodnar rotary switches only work with specific Leo Bodnar control boards.
