A sounding rocket is a sub-orbital rocket launcher, not capable of achieving orbit but powerful enough to send a small payload into high atmosphere, at high speed. It's also useful for 0G science experiments.

France and Europe used many rocket stages as sounding rockets, both for convenience and for testing. With Knes, ou have everything you need to build and fly two French sounding rockets: the Véronique (Varinka) and the Vesta (Viska). You can also mount a tin can with a cat inside on top of those, but don't forget the recovery systems !
