Cryostats (wikipedia) are tanks designed to store resources at very low temperatures. Cryostats need constant power supply to work properly - without power, materials stored in them will start to boil off. This means that when using cryostats on your vessels, you need to take care and provide them with enough power at all times. Otherwise your vessel (and your poor Kerbals) could be stranded in space without the resources needed to return home. The power needed for each cryostat is easily visible in each of the part's description box.
