Set the volume osascript -e "set volume 5" (the range goes from 0 to 6) and run say "Hello. this is the text that I should say." -v Alex. The v option is the voice and in /System/Library/Speech/Voices at least these are available.

Female: Agnes, Kathy, Princess, Vicki, Victoria
Male: Albert, Alex, Bruce, Fred, Ralph
Special: BadNews (not working on my mac), Bahh, Bells, Boing, Bubbles, Cellos, Deranged, GoodNews (working), Hysterical, Junior, Organ, Trinoids, Whisper, Zarvox
