History

Founded 1989. Continues tradition of sparkling Pinot Noir originally produced by Paul Masson in 19th century from Saratoga vineyard. Named Oeil du Perdix (Eye of the Partridge), continued during Prohibition "for medical purposes." Tradition was on hiatus for 13 years after death of Masson's successor Martin Ray.

2008: Moved to industrial unit on Swift Street in Santa Cruz. Previously made wines at nearby Storrs Winery.

Winemaking

Produces couple of barrels per year of 100% Chardonnay sparkling wine from Santa Cruz Mountains vineyards, notably Trout Gulch Vineyard. Traditional Méthode Champenoise, hand riddled. Bottles show splash of white paint to track riddling.
