Multi-hop journeys would allow a Demand to be matched with several hops to get a consignment to its destination. This is more tricky though -- there would have to be mechanisms in place to ensure that the original item is the one that transitions through each "chain" in the route.
This verification could be done by comparing photographs of the item with the one received at each hop, etc.
