The best of both worlds, under water and under ground.
Servings: 2-3
Ingredients
- 1 lb skinless salmon fillet
- 12 red mini potatoes, scrubbed and halved.
- Carrots, cut into chunks
- Parsnips, cut into chunks
- Extra-virgin olive oil
- 1 Lemon, halved.
Tools
- Glass baking dish
- Chef's knife
- Vegetable cutting board
Steps
- Preheat the oven to 400 degrees F.
- In glass baking dish, spread olive oil on the bottom, and add potatoes, carrots, and parsnips.
- Season with salt, pepper, oregano, basil, and lemon juice.
- Roast for 25 minutes.
- Coat salmon with olive oil, salt, pepper, oregano, basil, and nestle in pan. Drizzle lemon juice.
- Roast for 15-20 minutes, check for internal temperature of at least 145 degrees F.
- Squeeze remaining lemon juice and serve.
