Type: Dinner

The best of both worlds, under water and under ground.

Servings: 2-3

Ingredients

  • 1 lb skinless salmon fillet
  • 12 red mini potatoes, scrubbed and halved.
  • Carrots, cut into chunks
  • Parsnips, cut into chunks
  • Extra-virgin olive oil
  • 1 Lemon, halved.

Tools

  • Glass baking dish
  • Chef's knife
  • Vegetable cutting board

Steps

  1. Preheat the oven to 400 degrees F.
  2. In glass baking dish, spread olive oil on the bottom, and add potatoes, carrots, and parsnips.
  3. Season with salt, pepper, oregano, basil, and lemon juice.
  4. Roast for 25 minutes.
  5. Coat salmon with olive oil, salt, pepper, oregano, basil, and nestle in pan. Drizzle lemon juice.
  6. Roast for 15-20 minutes, check for internal temperature of at least 145 degrees F.
  7. Squeeze remaining lemon juice and serve.
