A hearty stew.
Servings: 6
Ingredients
- 2 lbs venison (or beef) cut in 1" chunks
- 2 tbsp olive oil
- 1 tsp Worcestershire sauce
- 3 cups beef broth or bullion
- 2 cloves garlic
- 1 stalk celery, chopped fine
- 1/4 cup red cooking wine
- 1/4 cup tomato paste or 1/2 cup tomato sauce
- 2 bay leaves
- 1 tsp salt
- 1 tsp sugar
- 1/2 tsp paprika
- 1/4 tsp pepper
- dash of ground allspice or cloves
- 2 medium onions quartered
- 6 carrots, pared, cut into chunks
- 4 medium potatoes, pared, cut in chunks (leave some skin if organic)
- Parsnips or other root vegetables

Steps
- In large saute pan, brown meat exterior in the oil, turning often.
- After a couple minutes, add garlic, celery, and Worcestershire sauce.
- Add one cup of broth to get all the browning bits into the solution.
- Empty to pan into the slow cooker or stovetop stew pot.
- Add remaining broth and all remaining ingredients.
- Cook in the slow cooker on high for 6 hours, or simmer on stovetop, covered, for 1 1/2 hours.
- Serve with salad, crusty bread, and a sharp cheddar cheese and/or butter.
