Type: Dinner

A hearty stew.

Servings: 6

Ingredients

  • 2 lbs venison (or beef) cut in 1" chunks
  • 2 tbsp olive oil
  • 1 tsp Worcestershire sauce
  • 3 cups beef broth or bullion
  • 2 cloves garlic
  • 1 stalk celery, chopped fine
  • 1/4 cup red cooking wine
  • 1/4 cup tomato paste or 1/2 cup tomato sauce
  • 2 bay leaves
  • 1 tsp salt
  • 1 tsp sugar
  • 1/2 tsp paprika
  • 1/4 tsp pepper
  • dash of ground allspice or cloves
  • 2 medium onions quartered
  • 6 carrots, pared, cut into chunks
  • 4 medium potatoes, pared, cut in chunks (leave some skin if organic)
  • Parsnips or other root vegetables

  • Liquid measuring cup
  • Slow cooker or stew pot
  • Meat cutting board

Steps

  1. In large saute pan, brown meat exterior in the oil, turning often.
  2. After a couple minutes, add garlic, celery, and Worcestershire sauce.
  3. Add one cup of broth to get all the browning bits into the solution.
  4. Empty to pan into the slow cooker or stovetop stew pot.
  5. Add remaining broth and all remaining ingredients.
  6. Cook in the slow cooker on high for 6 hours, or simmer on stovetop, covered, for 1 1/2 hours.
  7. Serve with salad, crusty bread, and a sharp cheddar cheese and/or butter.
