Curry, meet comfort food.

Ingredients

  • 1 cup rice
  • 1 1/2 tbsp olive oil
  • 1 small, yellow onion, thinly sliced
  • 2 tsp curry powder
  • 1/2 cup plain yogurt
  • 3/4 cup heavy cream
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 Rotisserie chicken, shredded
  • 1/4 cup fresh cilantro leaves, roughly chopped

Tools

  • Large Skillet
  • Chef's knife
  • Cutting board
  • Large storage container

Steps

  1. Cook the rice according to the package directions
  2. Heat the oil in a skillet over medium-low heat. Add the onion and cook, stirring occasionally, for 7 minutes.
  3. Sprinkle with curry powder and cook, stirring, for 1 minute.
  4. Add the yogurt and cream and simmer gently for 3 minutes. Stir in salt, pepper. Remove from heat.
  5. Portion rice into a serving bowl, layer on chicken, spoon sauce over top, sprinkle with cilantro.
