In Illustrator

• Create the path shape you want.
• Add a rectangular path on a layer below it.
• Cut the path shape with Cmd + X and add it as a top layer with Cmd + F.
• Select both layers.
• Click subtract in the Path Finder.
• Re-add the original layer (currently in the clipboard) using Cmd + F.
