Ingredients
Meatballs:
- 1 lb ground turkey
- 2 eggs
- 2 Tbsp garlic mince
- 2 Tbsp whole milk
- ¼ cup Panko Bread Crumbs
- ½ tsp of salt
- 1 tsp black pepper
- ½ tsp all spice
- 1 tsp Worcestershire Sauce
- 1 small white onion, finely diced
- dried parsley for Garnish
Gravy:
- 4 Tbsp stick of butter
- 16 oz of vegetable stock
- 8 oz heavy cream
- 1 Tbsp Dijon Mustard
- 1/2 tsp black pepper
- 1 tsp dried dill
- pinch of flour and water, mixed to a paste
Mashed Potatoes:
- 4-5 Yukon Gold potatoes leads to about 3 servings or so
- 2 Tbsp crema agria
- 1 tsp garlic powder
- 1/2 tsp black pepper
- 1 tsp cumin
- 1 tsp dried dill
Procedure
Peel potatoes. Chop into ¼-⅜ in quartered slices. Boil 10 minutes.
Dice onion finely.
Mix ground turkey, eggs, garlic and milk until uniformly mixed.
Add Panko breakdcrumbs, salt, black pepper, allspice and Worscestershire sauce.
Add onion.
Form meatballs. Refrigerate for 15 minutes.
Mash potatoes. Add sour cream, milk, garlic powder, salt, cumin, black pepper and dill.
Fry meatballs in batches. Drain.
Add butter to skillet, melt. Add broth. Add dijon and whisk.
Lower heat. Add heavy cream.
Mix flour with water to create paste. Add to sauce.
Season with black pepper and dill.
Add meatballs to sauce, cover with sauce and ensure 165 internal temperature.
Serve mashed potato on place. Form crater. Place meatballs in crater. Cover with sauce. Garnish with parsley.
3/16/2023 --- Meat mixture was too wet. Too much milk? Had to add bread crumbs. Emeril Lagasse version uses more bread crumbs and soaks them in milk / cream before mixing with meat.
