Southern Style Collard Greens - joe-possum/recipes GitHub Wiki
Ingredients
- 6 oz hickory-smoked bacon slices, finely chopped
- 1 medium-size sweet onion, finely chopped
- 6 oz smoked ham, chopped
- 3 garlic cloves, finely chopped
- 48 oz chicken broth (1 oz Better Than Boullion)
- 2x 12 oz bunches fresh collard greens, washed and trimmed
- 1-½ oz apple cider vinegar
- 1 tsp. table salt
- ½ tsp. pepper (2 turns on grinder)
Procedure
Heat oven and skillet to 375°F.
Add chopped bacon to skillet, stirring occasionally.
Set chicken broth to boil in 3 Qt pot.
Once bacon is crisp, remove from skillet and set aside.
Add ham and onion and sauté for 10 minutes.
Add garlic and briefly sauté.
Dump skillet into pot of chicken broth. Add remaining ingredients.
Simmer for 2 hours, adding bacon near end.
