Ingredients
- 8-10 lb Boston Butt pork shoulder
- Pork shoulder Brine
- Mustard
- Dry Rub
- Butcher Paper
Procedure
Marinate shoulder for 24h
Let rest 2h
Coat with mustard. Apply dry rub.
Let rest overnight wrapped.
Sear surface in 450+°F grill for 15 minutes.
Reduce grill to 200°F. Setup thermometers while grill is cooling. Grill until internal reaches 150°F.
Wrap in butcher paper. Grill until internal reaches 195°F.
Let rest 1h before shredding.
