  • 6 best-quality sausages, cooked, cooled and chilled
  • 4 large free-range eggs
  • 1 oz butter
  • 2 onions, finely diced
  • 2 garlic cloves, grated
  • 2tbsp English mustard
  • 2tbsp chopped sage leaves
  • Sea salt and freshly ground black pepper
Preheat the oven to 400°F.

Cut the cooked sausages into bite-sized pieces.

Warm a 9½in nonstick ovenproof frying pan over a medium heat. Drizzle in some vegetable oil and fry the sausage pieces until they’re browned and crisp. Remove and drain on kitchen paper.

Add the butter to the pan and, once it has melted, tip in the onions and garlic. Season with salt and pepper and sweat gently, stirring from time to time, until soft. This will take about 10-15 minutes.

Meanwhile, in a bowl, whisk the eggs with the mustard and season with salt and pepper. Pour the egg mixture into the pan and cook just until the bottom begins to set. Add the cooked sausage and chopped sage, then place the pan in the oven for 10-12 minutes, until the omelette is just set on top.
