Pickled Red Onions - joe-possum/recipes GitHub Wiki

  • 1 cup red wine vinegar
  • 1 cup water
  • 1½ Tbsp kosher salt
  • 1 Tbsp sugar
  • 1 Tbsp black peppercorns
  • 2 bay leaves
  • 1 small lime, peel only
  • 1 large red onion, very thinly sliced (a mandolin works best)

Instructions

In a small stainless steel pot, add red wine vinegar, water, salt, sugar, peppercorns, bay leaves and lime peelings. Bring to a simmer then remove from heat.

Strain liquid into a bowl, removing all solids. Allow to sit 10 minutes.

Place onions in a container with a tight fitting lid and pour brine over onions. Cover and refrigerate for at least an hour.
