Pasta Carbonara with Brussels Sprouts - joe-possum/recipes GitHub Wiki
Ingredients
- ¼ teaspoon fine sea salt
- 6 oz pasta such as orecchiette or penne
- 8 oz Brussels sprouts
- 1 tablespoons olive oil or butter
- 1 cloves garlic (minced)
- ⅛ teaspoon red chili flakes
- 1 large egg
- 1/2 cup grated Pecorino cheese
Procedure
Cook pasta.
Slice sprouts with mandoline.
Sauté garlic and red pepper flakes.
Add sprout slices and salt to skillet. Sauté about 3 minutes. Reduce heat to keep warm.
Beat egg in large bowl. Mix in cheese cheese.
Drain pasta. Add pasta to egg cheese mixture. Toss to coat.
Add Brussels sprout mixture.
