- 24 oz skinless boneless sole or flounder fillets (4 pieces)
- 1 tablespoon Curry Powder
- 1 tablespoon red pepper
- 3 tablespoon vegetable oil
- 1/4 cup all-purpose flour for dusting
- 1 teaspoon mustard seeds
- 1/2 cup finely chopped onion
- 1 teaspoon minced garlic
- 12 kari leaves
- 2 cups water
- 2 tablespoon tomato paste
- 1 teaspoon tamarind paste
- 1/2 cup coconut milk
Rub curry powder and red pepper in to fish.
Brown fish on high heat with 2 tablespoons oil. ~ 1 minute. Set aside.
Clean pan. Heat mustard seeds, covered on medium-high heat, until popping subsides.
Add onion, garlic and kari leaves. Cook until onions are soft, ~ 3 minutes.
Stir in water, tomato paste and tamarind paste. Boil sauce until reduced and think, ~ 5 minutes.
Add coconut milk, salt to taste and fish. Cook until sauce is piping hot and fish is cooked through.
