Ingredients

  • 2 Corn Tostadas about 5-6 inch or corn or flour tortillas
  • 3 oz cups Refried Black Beans warmed through
  • 2 oz cup salsa warmed through
  • 2 Large eggs
  • 2 teaspoons Oil to fry the eggs
  • 4 tsp Queso Fresco crumbled, for garnish optional
  • ⅓ medium Tomato seeded and diced, for garnish optional
  • 2 tsp tablespoons Chopped Cilantro for garnish optional

Procedure

Oil both sides of tortilla, salt. Bake 5 minutes / side at 400°F

Fry eggs

For each tostada

  • Spread 1.5 oz refried beans to inner area of tostada.
  • Spread 1 oz salsa.
  • Top with egg
  • garnish with queso, tomato and cilantro
