Guajillo Chile Salsa - joe-possum/recipes GitHub Wiki
Ingredients
- 16 guajillo chiles
- 4 cloves of garlic
- ¼ cup chopped cilantro
- 4 cups of water
- 2 tablespoons cooking oil
- 1 tsp. salt + as needed
Instructions
- Remove stems and seeds from chilies
- Place chilies and garlic in saucepans
- Cover with water
- Bring to boil
- Simmer 1 minute
- Allow to soak 15 minutes
- Add saucepan contents and cilantro to blender
- Blend until smooth
- Heat oil in saucepan
- Add blended salsa (source recommends straining, chilie skin may be bitter)
- Add Salt
- Simmer to desired consistency
- All salsa to rest at least 2 hours 4 to 6 recommended
