Guajillo Chile Salsa - joe-possum/recipes GitHub Wiki

Ingredients

  • 16 guajillo chiles
  • 4 cloves of garlic
  • ¼ cup chopped cilantro
  • 4 cups of water
  • 2 tablespoons cooking oil
  • 1 tsp. salt + as needed

Instructions

  • Remove stems and seeds from chilies
  • Place chilies and garlic in saucepans
  • Cover with water
  • Bring to boil
  • Simmer 1 minute
  • Allow to soak 15 minutes
  • Add saucepan contents and cilantro to blender
  • Blend until smooth
  • Heat oil in saucepan
  • Add blended salsa (source recommends straining, chilie skin may be bitter)
  • Add Salt
  • Simmer to desired consistency
  • All salsa to rest at least 2 hours 4 to 6 recommended
