Preparation

Wash and dry.

Cut into ⅜ inch thick disks.

Brine (30 - 60 minutes)

  • 2 tbsp
  • 8 oz hot water
  • 48 oz cold water Dissolve salting hot water. Add cold water. Submerge eggplant slices.

Marinating (30 minutes)

Grill (10 minutes)

5 minutes per side at 450°F
