Ingredients

Custard base

  • 3 eggs, lightly beaten
  • ⅓ cup white sugar
  • salt to taste
  • 20 oz milk

Character

  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • ½ teaspoon vanilla extract
  • 4 oz rum
  • pinch ground nutmeg

Procedure

Warm Milk to simmer in small saucepan.

Beat eggs and add sugar in large saucepan. Slowly blend in milk while beating to avoid scrambling egg. Stir down foam, the cook gently until begins to thicken. Place in ice bath to cool.

Mix in heavy cream and vanilla.

Serve with nutmeg.
