Creamed Spinach and Mushrooms - joe-possum/recipes GitHub Wiki

  • 1 pound fresh spinach, washed and dried
  • ½ cup shallots or onions, minced
  • 2 cloves garlic, minced
  • 1 pound button or Cremini mushrooms, sliced
  • 4 tablespoons butter
  • 1 cup heavy cream

Instructions

  • Melt butter over medium high heat in a skillet large enough to accommodate all the ingredients.
  • Add shallots, garlic and mushrooms. Sautee for 5 minutes or until the ingredients are sizzling not simmering and all the water has evaporated.
  • Add spinach to the pan and cover until spinach wilted.
  • When the spinach has wilted completely, add the cream into the pan and stir well.
  • Allow to simmer over medium heat for a few minutes to reduce.
  • Sprinkle with freshly grated nutmeg and serve.
