Creamed Spinach and Mushrooms - joe-possum/recipes GitHub Wiki
- 1 pound fresh spinach, washed and dried
- ½ cup shallots or onions, minced
- 2 cloves garlic, minced
- 1 pound button or Cremini mushrooms, sliced
- 4 tablespoons butter
- 1 cup heavy cream
Instructions
- Melt butter over medium high heat in a skillet large enough to accommodate all the ingredients.
- Add shallots, garlic and mushrooms. Sautee for 5 minutes or until the ingredients are sizzling not simmering and all the water has evaporated.
- Add spinach to the pan and cover until spinach wilted.
- When the spinach has wilted completely, add the cream into the pan and stir well.
- Allow to simmer over medium heat for a few minutes to reduce.
- Sprinkle with freshly grated nutmeg and serve.
