Cauliflower Soup (Serbia)

Ingredients

• 1 medium onion, chopped
• 1 large carrot, cut into thin coins
• 1 stalk celery, diced
• 1 medium tomato, seeded and chopped
• 1 medium potato, diced
• 1 medium to large head of cauliflower, chopped
• 32 oz water
• .84 oz Better Than Bouillon
• 2 tbsp flour

Spices

• 1 tsp dried thyme
• salt to taste
• ¼ tsp black pepper

Procedure

Sauté onion until translucent.

Add celery and carrot. Sauté 2 minutes.

Transfer to Instant Pot on Sauté. Season with spices. Add cauliflower, diced potato, tomato. Sauté for 1 minute.

Add chicken stock, switch to Soup mode for 15 minutes.

Prepare roux.

Mix roux in to soup and cook 10 minutes.
