Cauliflower Soup (Serbia)
Ingredients
- 1 medium onion, chopped
- 1 large carrot, cut into thin coins
- 1 stalk celery, diced
- 1 medium tomato, seeded and chopped
- 1 medium potato, diced
- 1 medium to large head of cauliflower, chopped
- 32 oz water
- .84 oz Better Than Bouillon
- 2 tbsp flour
Spices
- 1 tsp dried thyme
- salt to taste
- ¼ tsp black pepper
Procedure
Sauté onion until translucent.
Add celery and carrot. Sauté 2 minutes.
Transfer to Instant Pot on Sauté. Season with spices. Add cauliflower, diced potato, tomato. Sauté for 1 minute.
Add chicken stock, switch to Soup mode for 15 minutes.
Prepare roux.
Mix roux in to soup and cook 10 minutes.
