Cider and Turmeric Poultry Brine - joe-possum/recipes GitHub Wiki
- 93 oz water
- 1/2 cup(s) kosher salt (4.5oz)
- 1/4 cup(s) honey (3oz)
- 1 1/2 Tbsp Turmeric
- 1/3 cup(s) apple cider vinegar (3oz)
- 4 bay leaves
- 1 Tbsp black peppercorns
- 1 lemon peel
boil water followed by salt, honey, turmeric, bay leaves, peppercorns and lemon peel.
Bring to a simmer or until salt is absorbed into the liquid.
Allow brine to cool then refrigerate until cold.
Add cider vinegar
Add chicken
Cover pot and refrigerate for at 1-2 days. Vinegar softens bone.
