Ingredients

Procedure

Air fry tomatillos and peppers at 500°F for 10 minutes, turning halfway.

Place in bowl and cover for 10 minutes.

Slice pork into bite size pieces. Season well with salt and black pepper.

Place pork in air fryer at 500°F until well seared.

Remove pepper skins. Remove seeds as desired.

Blend tomatillos and peppers, onions and garlic.

Place sauce and seared pork in to Instant Pot. Slow cook for 3 hours.
