Ingredients

  • 2 chicken breast
  • 2 bell peppers
  • 1 onion

Marinade

  • 1/4 cup soy sauce, use gluten-free if needed
  • 2 tablespoons neutral oil
  • 1/4 cup brown sugar
  • 2 tablespoons lime juice
  • 2 tablespoons white vinegar
  • 3 cloves garlic, minced
  • 1 teaspoon kosher salt
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon ground pepper
  • 1 teaspoon ground chili powder
  • 1 teaspoon ground cumin

Procedure

Slice chicken ½ inch slices, pepper and onion in ¼ inch slices. Marinate for 24 hours.

Grill vegetables in a basket, shaking periodically. Grill chicken slices, grain side down, 6 minutes per side. 450°F grill.

Slice chicken in to taco appropriate slices.
