Ingredients
Dip
- 8 oz carrots (3-4)
- 2 oz tahini
- ¾ oz fresh lemon juice
- 1 clove of garlic
- Salt and pepper to taste
Garnish
- Extra-virgin olive oil
- 1 tbsp. toasted, chopped walnuts
Procedure
Bring 2 Qt pot water to boil.
Slice carrots lengthwise to ⅜ thick julienne.
Boil carrots 10 minutes.
Drain carrots, add to blender with tahini, lemon juice, garlic.
Blend to paste.
