Brussels Sprouts with Pancetta and Chestnuts - joe-possum/recipes GitHub Wiki
Ingredients
- 1 lb brussels sprouts, halved
- 2 oz chopped uncured pancetta
- 1 oz chestnuts nuts
Procedure
- Bring 2 quarts water + ½ tbsp salt to boil
- saute pancetta in Lodge to render fat
- Blanch brussels sprouts for 2 minutes
- remove sauted pancetta
- Saute brussels sprouts
- Reintroduce pancetta after a few minutes
- Add nuts for final minute
