Bank 0x28 is a real bank, but it has instruments that have bad pointers to broken bird samples. It is not used by any vanilla music in the game, it is probably left over from development, and since its unused, we can use it ourselves for ANYTHING, but don't bother taking the instruments from here they are garbage. Turns out the bank points at the wrong sample bank, the instrument pointers are valid for samplebank 2.

For Orchestral Kit (most common percussion kit used in the game, like in 0x03):
- G4 and higher is Timpani
- G3+ is Crash Cymbal
- D3+ is Acoustic snare
- Bottom drum is the same bass drum in Tijo's drums
For Drum kit alt used in (first half of credits 0x24)
- Ride Cymbal: A#3 and North
- Hi Hat: G#3 to A3
- Snare: D#3 to G2
- Shaker: D3 to C#3
- Acoustic Bass Drum: C3 and South
Tijo's Drums (Called Drum kit in some Soundfonts) is almost identical to Drum kit alt except the bass drum is not acoustic (Indigo-Gos band 0x13).
For Tambourine percussion kit (used in clocktown 0x19):
- (pitch bending makes it sound like there is a fourth sample here, but only three)
- D4 and above is Tambourine
- C4/C#4 are Snare
- Bottom is an a drum, we think its just a large tambourine with shake rings removed and hit edge on
For Conga kit (Conga with a shaker) (used in Zora Hall 0x0B):
- A6 and north is a fast shaker
- D5+ is slap
- G3+ is a Conga drum (softer)
- Deeper conga drum, like the big drum Bongo-Bongo starts playing in the shadow temple boss fight
For Chimes/Gong there are only those two instruments, separated at F4/G4 (Konami and Kotaku 0x0E)
Instrument Notes
Some instruments are named after the closest sounding instrument known to us, some are named after the name of the actual sample that was used to make the instrument.
"Iceland", "Fantasia", "Pit hit", "Awkbird", and the "Ethnic" items are mostly named after their samples, I didn't name them.

Sustain Guitar is named after its sample filename, Sustain Guitar ALT uses the same sample as Sustain Guitar but the MIDI attack envelope is set really high, so the start gets stretched and it sounds like a glass filled with water rubbed to create a shiny hum. "Jazz Guitar Alt 2" was the old name for the now Jazz Guitar.
The electric piano/organ sounds organ-ish at lower notes, piano ish at higher pitches, but gets used as a really weird synth ambience in ikana canyon.
"Kagura Suza" is a Japanese ceremonial wand containing many small bells, or at least we think its that considering how its used in sword school. It passable as Sleighbells though.
We used to call Shehnai "Bagpipes" because how it is used in-game is similar to how a bagpipe is played. It's fairly similar to the "Bassoon". Deathbasket, the one who first explored the list, called it "English Horn" and later when asked again said she thought it might be related to the Oboe d'amore.
Dulcimer/Marxophone has two samples, the upper sample is played like a dulcimer in [OOT:Market Place] music, but the lower sample is played and sounds completely different like it's a different instrument entirely. I'm not sure what the instrument is and am not convinced its a dulcimer at all. Even the upper sample sounds like a plucked dulcimer more than a hammered dulcimer (even if the market song is a hammered riff). In [Water temple] the instrument is played like a Marxophone, a zither with a spring loaded hammer controlled with keys. During the song the note is held down and the same note is played over and over by the string, the Marxophone is the only instrument I've found that behaves this way, however MIDI lets the aranger play instruments in ways they were never intended, so this could just be attempting to play samples in out-of-instrument ways to make new instruments. In Kotake/Koume its played like a mandolin at the start, but too low of an octave, and it sounds like it has a drone string embedded per note. In [Marine Laboratory] the lower sample is used as a single G drone string, which is reminiscent of certain east asian instruments, so it might not be a dulcimer at all. CDI-Fails used only the lower sample in his [Dawn and Dusk song: Dusk gardens], but he raised the split point to play it at higher notes that would normally be the dulcimer's upper sample. edit: we discovered the sample name is "Bouzooki" and I hate it. The instrument is clearly not
Bank 0x13 has three different pianos, where B and C use a different envelope from 6, and all three have different split points, meaning the shift from sample 2 to 3 changes notes, which can mean a lot of your music goes near those shift points.
Percussion naming is fubar, if you have a better recommendation please feel free to offer some.
Previously "Ethnic drums" from Sample collection "(Zero G)" Ethnic Vol 1, we believe to be a Djembe Drum.
Previously "Cathedral Bell" was identified as Carillon bell from https://soundideas.sourceaudio.com/track/7619125 There are two versions, one in bank 00 and one in the Romani ranch bank, and they are not actually the same sample and they behave differently. Both are out of tune, you can fix manually changing the tune to 0.6674199270850170 or 0.707106781165480, although one member said it sounds good at "0.65969"
Wave Instruments
The wave instruments seem to be static across all instrument sets, you can index them and use them regardless of what the assigned instrument set is.
80: Saw wave (low to high)

82: Sin wave
83: Step wave? (Negative -> Zero -> High -> Zero -> Negative (repeat), like a Ziggurat)
84: buzz (a specific static shaped wave)
85: buzz (a specific static shaped wave)
86: Pulse wave - low duty pulse (~1/7 ?)
87: Rectangle wave - medium duty pulse (~2/7 ?)
88: buzz (random fluctuating waves)
These instruments are 4 level deep wave tables, drawn by a list of points over time. Engineer124 has provided a drawn visual of the wavetables to make these sounds:
