Outlook keeps changing its user interface.

Search within an email

You can't do it from the preview pane. Double-click the email to get a separate window. Make sure the "Message" menu is selected. Pull down "Editing" and select "Find".

Search within composing email

Make sure the "Format Text" menu is selected. Pull down "Editing" and select "Find".
