Inspired by Woks of Life, with mods by me
For 4. Serve with rice.
Ingredients
- 1/2 lb ground pork
- 2 Tbsp chili oil, with solids
- 1 Tbsp ginger, minced or julienned
- 3 cloves garlic, minced
- 2 Tbsp fermented bean sauce (doubanjiang)
- 1/3 cup chicken broth (or water + chicken broth powder)
- 1 tsp soy sauce (preferably dark)
- 1 lb tofu, soft
- 2 tsp corn starch
- 1/2 tsp sesame oil
- 1/2 tsp sugar, to taste if desired
- Scallion and szechuan peppercorn powder for garnish
Steps
- Start rice if serving with.
- Break up ground pork in pan, and start browning. Season with salt.
- When flipping, add ginger and garlic. Continue cooking, breaking up.
- When decently browned, add bean paste, chicken broth, and soy sauce. Add tofu, and water to cover. Boil and lightly reduce.
- Prepare corn starch slurry. Add when nearly reduced completely, along with sesame oil and sugar to taste. At this point, it is recommended to use a gentle rubber spatula in folding motion to mix.
- Serve on rice with garnishes.
