For 4. Serve with rice.

Ingredients

  • 1/2 lb ground pork
  • 2 Tbsp chili oil, with solids
  • 1 Tbsp ginger, minced or julienned
  • 3 cloves garlic, minced
  • 2 Tbsp fermented bean sauce (doubanjiang)
  • 1/3 cup chicken broth (or water + chicken broth powder)
  • 1 tsp soy sauce (preferably dark)
  • 1 lb tofu, soft
  • 2 tsp corn starch
  • 1/2 tsp sesame oil
  • 1/2 tsp sugar, to taste if desired
  • Scallion and szechuan peppercorn powder for garnish

Steps

  1. Start rice if serving with.
  2. Break up ground pork in pan, and start browning. Season with salt.
  3. When flipping, add ginger and garlic. Continue cooking, breaking up.
  4. When decently browned, add bean paste, chicken broth, and soy sauce. Add tofu, and water to cover. Boil and lightly reduce.
  5. Prepare corn starch slurry. Add when nearly reduced completely, along with sesame oil and sugar to taste. At this point, it is recommended to use a gentle rubber spatula in folding motion to mix.
  6. Serve on rice with garnishes.
