Serves 3-4.

Ingredients

Rice:

  • 240g = 1.5 rice-cooker-cups of uncooked rice
  • 240g = Equal parts water

Meat:

  • 350g = 3/4 lb surimi (imitation crab meat)
  • 30g = 2 Tbsp siracha
  • 3 scallions
  • 20g = 2 Tbsp masago or tobiko (fish roe)
  • 250g = 1 cup mayo (preferably Kewpie)

Assembly:

  • 10g = 1 Tbsp masago or tobiko (separate as such)
  • 30g = 2/3 bottle of furikake
  • Sriracha mayo in a squirt bottle (or separately regular mayo and sriracha)
  • 3 sheets nori
  • 1/2 cucumber
  • 1 avocado

Steps

  1. Cook rice. Mix in 1 tsp of sesame oil to keep it from sticking.
  2. Shred the surimi, and mix into the meat mix. Combine.
  3. Preheat oven to 400F. Assemble:
  4. Press rice into the bottom of the casserole dish.
  5. Sprinkle 1/2 of the allotted furikake (ie. 1/3 bottle) on top of the rice.
  6. Spread meat mixture atop the rice.
  7. Sprinkle remainder of furikake on top.
  8. Sprinkle the remaining tobiko on top.
  9. Zigzag the sriracha mayo on top.
  10. Bake for 15-20 mins, or until the top is golden brown.
  11. Cut nori into 6x3" rectangles (or thereabouts)
  12. Slice cucumber and avocado into strips
  13. Serve by scooping the bake out onto nori, adding avo and cucumber, and wrapping it like a taco.

Casserole dish (I used the IKEA MIXTUR 11x7")

Notes

This is ... not a cheap dish to make. It's like $20 in ingredients.
