Soup, Lentil Tomato Beans Chili Vegetarian - ecnivo/Recipes GitHub Wiki

Makes 3 servings.

Ingredients

  • 1 cup beans, soaked
  • 1 onion, chopped
  • 2 tsp cumin
  • 2 tsp chili flakes
  • 1/3 cup split red lentils
  • 1/2 can crushed tomatoes
  • 1 cup chicken/vegetable stock or water
  • 1/2-size can corn kernels
  • 1/2 can coconut cream

Steps

  1. Cook down onions with oil. Add optional vegetables.
  2. Add cumin, chili flakes, salt, and pepper. Cook for a bit.
  3. Add tomatoes, stir. Deglaze as required with stock or water.
  4. Add drained beans, lentils, and corn kernels.
  5. Cover and simmer for 30 minutes-ish, or until the beans have softened. Don't eat raw beans!
  6. Optionally, puree. Mix in coconut cream and serve with bread or pita.
