Soup, Lentil Tomato Beans Chili Vegetarian - ecnivo/Recipes GitHub Wiki

Makes 3 servings.
Ingredients
- 1 cup beans, soaked
- 1 onion, chopped
- 2 tsp cumin
- 2 tsp chili flakes
- 1/3 cup split red lentils
- 1/2 can crushed tomatoes
- 1 cup chicken/vegetable stock or water
- 1/2-size can corn kernels
- 1/2 can coconut cream
Steps
- Cook down onions with oil. Add optional vegetables.
- Add cumin, chili flakes, salt, and pepper. Cook for a bit.
- Add tomatoes, stir. Deglaze as required with stock or water.
- Add drained beans, lentils, and corn kernels.
- Cover and simmer for 30 minutes-ish, or until the beans have softened. Don't eat raw beans!
- Optionally, puree. Mix in coconut cream and serve with bread or pita.
