Makes 680g of salmon

Ingredients

  • 680 g = 3-5 fillets of salmon, skin on/off optional
  • 70g = 1/4 cup miso (red or white, doesn't matter)
  • 78g = 1/3 cup sake
  • 15g = 1 Tbsp soy sauce
  • 28g = 2 Tbsp oil
  • 50g = 1/4 cup sugar
  • Garnish with chopped scallion and/or sesame seeds

Steps

  1. Combine ingredients to make marinade.
  2. Marinate, defrosted in refrigerator, for 8-24 hours
  3. Put on cast iron or other broiler-safe vessel
  4. Preheat broiler; cook for 5-7 minutes (skin-side-down) until lightly browned on top
  5. Serve with garnish
