Rolls, Pork Floss & Nori - ecnivo/Recipes GitHub Wiki

By me!

Makes eight rolls or so.

Ingredients

  • 1/2 cup mayonnaise
  • 1 cup pork floss (fluffed)
  • 1/4 cup thinly sliced scallions
  • 1/2 sheet nori / dried seaweed, thinly cut / shredded
  • 2 Tbsp furikake
  • Sesame seeds for topping

Special Equipment

Cast iron pan (optional), rolling pin

Steps

  1. After first (bulk) proof of milk bread dough, roll it out on a cutting board, approximately 18x10 inches
  2. Apply mayo, then prok floss, scallions, nori shreds, and furikake
  3. Roll up the milk bread dough, then cut the resultant "log" into 8 pieces.
  4. Preheat oven, and grease a cast iron pan.
  5. Arrange them cut-side-up in a "radial" pattern on a cast iron, and proof additional 1-1.5 hours (doubled in size).
  6. Egg wash; first, bake for 10 minutes at 375F w/ convection, then 10 more minutes at 350F non-convection (or until browned, careful not to burn them!) Tip: if convection is unavailable, simply bake for 375F for 20-23 minutes.
