Makes 1 rack of ribs.

Ingredients

  • 1 rack of ribs (back is best, side works too) -- the fattier, the better!
  • 1 Tbsp lemon zest (approx 1 lemon)
  • 1/4 cup (55g) EVOO
  • 1 onion, grated (electric grater is best!)
  • 2 cloves garlic, grated/minced
  • 3 Tbsp lemon juice (approx 1/2 lemon)
  • 1 tsp salt
  • 1 Tbsp dried rosemary
  • 1 Tbsp dried thyme
  • 1-2 Tbsp dried parsley
  • 1 tsp honey

Steps

  1. Remove membrane from ribs.
  2. Preheat oven to 205-210 F
  3. Combine ingredients and spread generously over ribs
  4. Bake for 4-6 hours (it will be cooked through, but not appealing looking)
  5. Place on hot grill, and sear until browned. Don't overcooked -- they can become dry easily!
