Ribs, Lemon Herb - ecnivo/Recipes GitHub Wiki

Makes 1 rack of ribs.
Ingredients
- 1 rack of ribs (back is best, side works too) -- the fattier, the better!
- 1 Tbsp lemon zest (approx 1 lemon)
- 1/4 cup (55g) EVOO
- 1 onion, grated (electric grater is best!)
- 2 cloves garlic, grated/minced
- 3 Tbsp lemon juice (approx 1/2 lemon)
- 1 tsp salt
- 1 Tbsp dried rosemary
- 1 Tbsp dried thyme
- 1-2 Tbsp dried parsley
- 1 tsp honey
Steps
- Remove membrane from ribs.
- Preheat oven to 205-210 F
- Combine ingredients and spread generously over ribs
- Bake for 4-6 hours (it will be cooked through, but not appealing looking)
- Place on hot grill, and sear until browned. Don't overcooked -- they can become dry easily!
