Potato soup, slow cooker - ecnivo/Recipes GitHub Wiki

By me! And I think someone else on the internet, but I don't recall who...

Serves a couple people for one meal, or a couple meals for one.

Ingredients:

  • 8 large potatoes (cheap as possible!), peeled, sliced thinly.
  • 1 large onion, chopped
  • 0.9-1.0 L water / chicken broth / vegetable broth / whatever broth
  • 2 garlic cloves (minced) ... alternatively, just dump in a "good amount" of garlic powder.
  • 1/4 cup of butter (or EVOO, if you're cheap.) (or regular oil, if you're really cheap)
  • Seasoning: 2 t of salt, 1 t of pepper.

  • 1 c cream (or half and half)
  • 1 c shredded cheese (used cheddar, use whatever, really)
  • 1/4 c fresh chopped "greens" garnish. (use whatever --- chives, green onion, whatever)
  • 1 c sour cream (optional, but really good)
  • 4 slices of bacon, fried and crumbled (highly recommended)
  • Cheese for sprinkling

Steps

  1. Cook the ingredients above the line for 8 hours on LOW (As per Crock-Pot temps)

Then for ingredients below the line:

  1. Mix the wet.
  2. Mix the dry.
  3. Mash potatoes in the slow cooker.
  4. Stir in wet, then the dry.
