Serves one for a couple meals. Or a couple people for one meal.
Ingredients (choose one of two recipes)
- 2 lb pork
- 1/2 onion, sliced pole-to-pole
- 1 can Dr Pepper (355g)
- 1 tsp honey (or sugar)
- 1 Tbsp balsamic vinegar
- 1/2 tsp salt
- 1 tsp ground black pepper
- 1/2 c barbeque sauce
- mashed potatoes, tortillas or hamburger buns
- 2-3 lb pork, cheap
- 1 onion, thinly sliced
- 1 tsp salt
- 1 tsp ground cumin
- 1 tsp black pepper
- 1 tsp ground coriander
- 1 tsp mustard powder
- 1/2 tsp ground fennel
- 1/2 tsp cayenne pepper (to taste)
- 1 Tbsp paprika
- 2 Tbsp sugar
- 1 Tbsp molasses (optional)
- 2 Tbsp vinegar (cider preferred)
- 1 tsp liquid smoke
- 1/2 c BBQ sauce
Steps
- Brown the pork on all sides. Put the meat in the slow cooker.
- Optional: put the onion, salt and pepper into the pan. Cook down until soft, and put that in the slow cooker too.
- Put everything except the BBQ sauce in the slow cooker too. Add water to cover if required
- Cook on HIGH for 3-4 hours or LOW for 7-8 hours.
- Trim off skin and discard. Shred pork and fat, then mix together. Mix in BBQ sauce. Optionally, put everything into a pan and cook the juices down some more.
- Salt and pepper to taste, then serve on buns or with mashed potatoes.
