Serves one for a couple meals. Or a couple people for one meal.

Ingredients (choose one of two recipes)

  • 2 lb pork
  • 1/2 onion, sliced pole-to-pole
  • 1 can Dr Pepper (355g)
  • 1 tsp honey (or sugar)
  • 1 Tbsp balsamic vinegar
  • 1/2 tsp salt
  • 1 tsp ground black pepper
  • 1/2 c barbeque sauce
  • mashed potatoes, tortillas or hamburger buns

  • 2-3 lb pork, cheap
  • 1 onion, thinly sliced
  • 1 tsp salt
  • 1 tsp ground cumin
  • 1 tsp black pepper
  • 1 tsp ground coriander
  • 1 tsp mustard powder
  • 1/2 tsp ground fennel
  • 1/2 tsp cayenne pepper (to taste)
  • 1 Tbsp paprika
  • 2 Tbsp sugar
  • 1 Tbsp molasses (optional)
  • 2 Tbsp vinegar (cider preferred)
  • 1 tsp liquid smoke
  • 1/2 c BBQ sauce

Steps

  1. Brown the pork on all sides. Put the meat in the slow cooker.
  2. Optional: put the onion, salt and pepper into the pan. Cook down until soft, and put that in the slow cooker too.
  3. Put everything except the BBQ sauce in the slow cooker too. Add water to cover if required
  4. Cook on HIGH for 3-4 hours or LOW for 7-8 hours.
  5. Trim off skin and discard. Shred pork and fat, then mix together. Mix in BBQ sauce. Optionally, put everything into a pan and cook the juices down some more.
  6. Salt and pepper to taste, then serve on buns or with mashed potatoes.
