Ingredients

  • 2 tsp = 7 g yeast
  • 1 cup = 240 g water
  • 1 cup = 125 g flour

  • 1.5 Tbsp EVOO
  • 1.5 tsp salt
  • 1.75 = 220 g flour

Steps

  1. Mix first three in a mixer's bowl, and let stand for 15-20 minutes to proof and hydrate
  2. Mix remaining three and knead, 10 minutes or so.
  3. Proof for 1-2 hours, until at least doubled
  4. Divide and roll into taut spherical balls
    • Vince's lazy method: generously dust with flour, and send the dough through the stand mixer rollers, using setting #1, pass 2-3x. Then set to #2, then pass 2x.
  5. Roll out into thin discs, and heat on a makeshift-tandoor of a cast-iron pan with little oil.
    • Notes from Vince's electric stove: use the long griddle over the left two burners. Preheat to setting #6.
    • The center is lower heat -- start pitas here. Then move to the outer sections directly over the burners.
  6. Keep warm and serve.
