Makes 1 smol pie.

Ingredients

Filling

  • 2 tbsp cornstarch
  • 2 tbsp lemon juice
  • 1/2 cup sugar
  • 3/8 cup water
  • lemon zest
  • 2 egg yolks
  • 14g salted butter

Meringue

  • 2 egg whites
  • 1/4 cup sugar
  • 1/4 tsp vanilla
  • pinch salt

Steps

  1. Acquire or make pie crust. If raw, dock dough and fully blind bake (cooked through).

  2. In small pot on medium heat, whisk together cornstarch, lemon juice, sugar, water, zest, for 6-7 minutes or until mixture is appropriately thick. Turn off heat, add egg yolks, one at a time, and whisk for another 2 minutes. Mix in butter until melted and combined, and pour into pie crust.

  3. In double broiler, whisk sugar into egg whites, until sugar is dissolved. Whip for 15 minutes, from low speed gradually up to high speed until stiff peaks. Add vanilla and salt at soft peaks. Pile meringue onto pie, make a mountain on top of the filling. Make swooshes, add pointy tips in meringue for nice colour contrast when torching.

  4. Torch meringue, or CAREFULLY broil in oven to appropriate roastiness. Top with extra zest. Serve chilled.
