Find a "topping" whether it's separately baked pavlovas or something
Ingredients
Cookie dough:
- 150g butter
- 75g sugar
- 5g molasses
- 0.75 tsp salt
- 2 eggs (~100g)
- 10g = 2 tsp vanilla extract
- 80g = 1/2 cup flour
- 400g graham crumb
Key lime filling:
- 300mL sweetened condensed milk (1 can) = 375g
- 110g cream cheese
- Zest of three limes (optional: buy a fourth lime; use its zest or slice it up thinly for garnish)
- 90g lime juice (from the aforementioned limes, top it up with extra lemon/lime juice if required)
- 20g flour
- 1/2 tsp salt
- 2 egg whites
Equipment
Grater/microplane. Stand mixer and citrus juicer are recommended.
Steps
- Cream butter and sugar in a stand mixer bowl.
- Add remaining dough ingredients. Put in another bowl, then into the fridge to chill. Wash the stand mixer bowl.
- Preheat oven to 350 with rack in the middle.
- Mix filling ingredients (except egg whites) in a second bowl. Whisk at high speed to get rid of lumps. Put in another bowl, then into the fridge to chill. Wash the stand mixer bowl and whisk.
- Whip two egg whites to (very) stiff peaks. Fold + cut 1/3 of the egg whites into the filling, to lighten.
- Fold the filling back into the egg whites, but don't cut! Put it into the fridge to chill, min 20 minutes.
- Flour work surface, and roll the cookie dough out to 1/4 inch. Use a 2.5" ring mould or similar to cut.
- Scoop filling using 1 Tbsp scoop onto each cookie.
- Bake for 17-20 minutes, until the filling is set and the edges of the cookies begin to pick up some color.
- Optionally garnish with candied lime or pavlova or something.
