Serves 2-3

Ingredients

  • 1/4 pound = 100g thick cut bacon
  • 2 ounces = 60g Parmesan or Romano cheese
  • 1 egg
  • 1 egg yolk
  • Ground black pepper
  • 1 clove garlic
  • 1/6 cup = 45g starchy pasta water
  • 8 ounces = 200g noodles

Steps

  1. Whisk eggs, cheese, and black pepper
  2. Slice bacon into large chunks. Slowly render out fat on a pan.
  3. Start boiling water for noodles.
  4. Remove bacon, keeping the fat. Add the minced garlic to the fat. Turn off the heat, and saute with the residual heat.
  5. Mix in the cooked noodles, add back the bacon.
  6. When cooled slightly, add the egg mixture.
    • (you don't want large bits of curdled egg)
  7. Add some pasta cooking water so that the sauce will stick to noodles. Optionally add even more cheese.
