Serves 2-3
Ingredients
- 1/4 pound = 100g thick cut bacon
- 2 ounces = 60g Parmesan or Romano cheese
- 1 egg
- 1 egg yolk
- Ground black pepper
- 1 clove garlic
- 1/6 cup = 45g starchy pasta water
- 8 ounces = 200g noodles
Steps
- Whisk eggs, cheese, and black pepper
- Slice bacon into large chunks. Slowly render out fat on a pan.
- Start boiling water for noodles.
- Remove bacon, keeping the fat. Add the minced garlic to the fat. Turn off the heat, and saute with the residual heat.
- Mix in the cooked noodles, add back the bacon.
- When cooled slightly, add the egg mixture.
- (you don't want large bits of curdled egg)
- Add some pasta cooking water so that the sauce will stick to noodles. Optionally add even more cheese.
