Ingredients
- 200g = 1/2 sweet potato glass noodles, circular cross-section, "dangmyeon"
Marinade:
- 15g = 1 Tbsp soy sauce
- 12g = 1 Tbsp sugar
- 8g = 1/2 Tbsp sesame oil
- 8g = 1/2 Tbsp mirin
- 2 cloves garlic, minced
- 225g = 1/2 lb meat (pork or beef, in hot-pot style thin slices, then sliced into 3cm width ribbons)
Toppings:
- 2 eggs, beaten
- 1/2 onion
- 3 mushrooms (eg. shiitake)
- 1/2 carrot
- 1/2 bell pepper
- 1 bunch spinach (or gomaae)
Sauce:
- 20g = 4 tsp soy sauce
- 15g = 4 tsp sugar
- 10g = 2 tsp sesame oil
- 5g = 1 tsp sesame seeds, toasted (and extra for topping)
- Dash of ground black pepper
Steps
- Make marinade. Marinade for 20 minutes.
- In the meantime, boil a pot of water for noodles. Cook noodles as package directions. Shock cool noodles in cold water to prevent stickage.
- Mise en place the vegetables in the mean time.
- Cook the eggs into an omelet, then slice into 3cm width ribbons
- Heat pan on medium/medium-high, drain the meat of any accumulated juices, and sear. Agitate so you split up the ribbons.
- Assemble with noodles first, then meat on top, then vegetables, then drizzle sauce over top.
