Ingredients

  • 200g = 1/2 sweet potato glass noodles, circular cross-section, "dangmyeon"

Marinade:

  • 15g = 1 Tbsp soy sauce
  • 12g = 1 Tbsp sugar
  • 8g = 1/2 Tbsp sesame oil
  • 8g = 1/2 Tbsp mirin
  • 2 cloves garlic, minced
  • 225g = 1/2 lb meat (pork or beef, in hot-pot style thin slices, then sliced into 3cm width ribbons)

Toppings:

  • 2 eggs, beaten
  • 1/2 onion
  • 3 mushrooms (eg. shiitake)
  • 1/2 carrot
  • 1/2 bell pepper
  • 1 bunch spinach (or gomaae)

Sauce:

  • 20g = 4 tsp soy sauce
  • 15g = 4 tsp sugar
  • 10g = 2 tsp sesame oil
  • 5g = 1 tsp sesame seeds, toasted (and extra for topping)
  • Dash of ground black pepper

Steps

  1. Make marinade. Marinade for 20 minutes.
  2. In the meantime, boil a pot of water for noodles. Cook noodles as package directions. Shock cool noodles in cold water to prevent stickage.
  3. Mise en place the vegetables in the mean time.
  4. Cook the eggs into an omelet, then slice into 3cm width ribbons
  5. Heat pan on medium/medium-high, drain the meat of any accumulated juices, and sear. Agitate so you split up the ribbons.
  6. Assemble with noodles first, then meat on top, then vegetables, then drizzle sauce over top.
