This recipe isn't meant to be authentic, but instead easier to cook & just taste good

Ingredients

  • 300g chicken thighs (skinless boneless)
  • 100g bacon (optional, recommended)
  • 150g andouille / Creole sausage, sliced rounds or half-moons
  • 120g shrimp, peeled and deveined

  • 1/2 to 1 onion
  • 1 bell pepper
  • 2 celery ribs
  • 2 garlic cloves
  • 250g (1/3 can) crushed tomatoes
  • 350mL chicken stock (1.5 cups)
  • 1 Tbsp hot sauce

  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • 1/4 tsp cayenne pepper
  • 1 tsp black pepper
  • 1 tsp salt
  • a bay leaf

  • 1 cup rice
  • Scallions (garnish)

Steps

  1. Cook rice in rice cooker.
  2. Sear chicken in a large pot. Remove and cut into chunks.
  3. Optionally, render fat from bacon. Otherwise, skip this step.
  4. Cook down onions, bell peppers, and celery.
  5. Add sausage and garlic; cook, scraping fond.
  6. Deglaze with tomato paste, then chicken stock.
  7. Add spices.
  8. Mix in rice when it's done, and add in shrimp. Stir in shrimp and scallions, cook until just pink, and serve.
