This recipe isn't meant to be authentic, but instead easier to cook & just taste good
Ingredients
- 300g chicken thighs (skinless boneless)
- 100g bacon (optional, recommended)
- 150g andouille / Creole sausage, sliced rounds or half-moons
- 120g shrimp, peeled and deveined
- 1/2 to 1 onion
- 1 bell pepper
- 2 celery ribs
- 2 garlic cloves
- 250g (1/3 can) crushed tomatoes
- 350mL chicken stock (1.5 cups)
- 1 Tbsp hot sauce
- 1/2 tsp dried thyme
- 1/2 tsp dried oregano
- 1/4 tsp cayenne pepper
- 1 tsp black pepper
- 1 tsp salt
- a bay leaf
- 1 cup rice
- Scallions (garnish)
Steps
- Cook rice in rice cooker.
- Sear chicken in a large pot. Remove and cut into chunks.
- Optionally, render fat from bacon. Otherwise, skip this step.
- Cook down onions, bell peppers, and celery.
- Add sausage and garlic; cook, scraping fond.
- Deglaze with tomato paste, then chicken stock.
- Add spices.
- Mix in rice when it's done, and add in shrimp. Stir in shrimp and scallions, cook until just pink, and serve.
